Ingredients

For the Dough:

  • ½ cup unsweetened creamy peanut butter (128g)
  • ¼ cup unsalted butter, softened (56g)
  • 1 large egg
  • ½ tsp vanilla extract (2.5ml)
  • ¼ cup powdered sugar-free sweetener (48g)
  • 2 Tbsp coconut flour (14g)
  • ¼ tsp baking soda (1.5g)
  • ¼ tsp salt (1.5g)

For Rolling and Topping:

  • 2 ½ Tbsp granulated sugar-free sweetener (30g)
  • 5 Tbsp sugar-free chocolate chips, melted (70g)

Instructions

Step 1: Prepare the Chocolate Kisses

  1. Melt sugar-free chocolate chips in the microwave in 15-30 second intervals, stirring until smooth.
  2. Fill each cavity of a silicone mold with melted chocolate. Lightly tap the mold to remove air bubbles. Use a toothpick to pop any remaining bubbles at the tip of each cavity.
  3. Refrigerate the mold until the chocolate hardens, then carefully remove the kisses.

Step 2: Make the Dough

  1. In a bowl, combine peanut butter and softened butter. Stir or beat until smooth.
  2. Add the egg and vanilla extract, mixing until incorporated.
  3. Gradually mix in powdered sweetener, followed by coconut flour, baking soda, and salt. The dough will thicken as the ingredients combine.
  4. Chill the dough in the refrigerator for 1-2 hours or until firm.

Step 3: Shape and Bake

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Roll the chilled dough into smooth 1-inch balls. Roll each ball in granulated sweetener to coat.
  3. Place the dough balls on the prepared baking sheet, spacing them evenly apart.

Step 4: Add the Chocolate

  1. Bake for 6-8 minutes, then remove the cookies from the oven.
  2. Immediately press one chocolate kiss into the center of each cookie while they are still warm.
  3. Allow the cookies to cool completely before serving.

Tips and Variations

  • No Kiss Mold? If you don’t have a silicone mold, press a few sugar-free chocolate chips (about 1 tsp per cookie) into the center instead. You can also use any small, kiss-shaped sugar-free chocolate.
  • Storage: Store cookies in an airtight container at room temperature for up to 5 days, or refrigerate for extended freshness.
